When I was a little kid, we used to go to Maine to visit my mom's family. We had a tradition that we would always go to the Ben & Jerry's in Freeport and I got Cherry Garcia in a waffle cone. It was my favorite ice cream and one of my favorite traditions. I even got a Ben & Jerry's shirt from there.

Looking back on those memories and thinking about what Ben and Jerry's has become just makes me sad. Why do they hate me, bros

Get with the times grandpa. Most artisan ice cream makers use gums to improve texture. You have to stabilize the ice cream base somehow to reduce ice crystal size, and gums are the best way. Some producers use ingredients like starch or eggs as stabilizers, but they are strictly speaking worse than gums in that they give inferior flavor release and sometimes mess up texture in other ways.

Häagen-Dazs has an unusual stabilizer strategy in that they've figured out some way to treat their milk in such a way that the milk proteins become effective stabilizers. It's widely known that by holding milk at 71-78 C, the whey proteins partially denature and gain some emulsifying and stabilizing power. But normally you still have to supplement with added stabilizer. HD are probably treating their milk with some kind of enzymes, chemicals or black magic which makes this process more effective and allows them to rely solely on the milk proteins.

All of this is done solely to achieve a clean label. They use this complicated science to give the illusion that their ice cream is natural and low in additives. But really it's something you could never achieve in a home kitchen. Adding guar gum to homemade ice cream for stabilization is actually a much more low-tech recipe.

Somewhat unrelated, but did you guys know you can compare relative quality of ice cream/gelato by its density. Most are the same serving size, 2/3 cup, both BJ and HD are 130ish. Other ice creams are much less (80-90), cause of gums ect,... Though its not really absolute.

Although for cheap ice cream Breyers is pretty good cause they use decent ingredients.
