Assuming that’s pork tenderloin you’re gonna want to clean off all that silver skin, cut through the grain to get 3 or 4 equal pieces, and brine it for 2-4 hours.

I like this recipe:
1 L water
1/4 c salt
2 tbsp sugar
1 lemon, zested then squeezed
2 bay leaves
1 star anise
2 garlic cloves, crushed
1/2 medium onion, sliced
Coriander, clove, orange peel, and cinnamon all optional in degrees.

Once it’s soaked for the time remove from brine, dry with paper towel, and rest room temp, 10 min.

In a hot (7/8) pan introduce oil until just smoking and sear hard all around. Finish for 5 min in 350F oven. Flip once, rest away from pan then slice.
