SA has some very nice dishes. Tabbouleh is great. I once ate Guinee at someone's who was from there. I can't remember the name but it was quite nice. They eat 'hard chicken', like from roosters and stuff, make a stew and it was served with a bitter spinach-like vegetable. Very earthy, rich flavour.
