i noticed the same thing when i started making that kind of stuff more often, most recipes just use too much. a typical recipe uses one teaspoon of baking soda or a tablespoon of baking power for every two cups/240g of flour but you only need half that amount of baking soda/powder. they still rise the same way but no aftertaste.

They are basically just crepes but with more flour and eggs so the consistency of the "dough" is thicker, which results in obviously also thicker pancakes.
If you want something different try the Eastern European ones that are made with yeast, but also often buckwheat flour.

Can't both just have their place? American pancakes are nice in cold weather months, maple syrup, home fries and crispy bacon. Crepes are lighter, more finesse year round alternative that are lovely with sugar and lemon juice or cinnamon and vanilla ice cream. Both can be ridiculously delicious. Only thing I'll say is I've never had nice shop bought crepes but I have with american pancakes

That is what we dutch people make. Sometimes we make bacon pancakes filled with cheese then rolled up like wrap. Then we use a knife and a fork to cut it into bitesized pieces.

Some of my favourite pancake bases

Ideally yes, rebreaded and than fried crispy. The breading will prevent them from opening up and it's a great snack even cold from the fridge. But you can also just put the meat in a ready pancake and eat it like that if you're too lazy for the whole breading process. Tho nothing tops the crispyness.
