They get crapped on for pot luck slop and hot dish and church culture, where you see ridiculous dessert salads and low-effort casseroles and this, that, or the other. But where the real value lies is in drive ins and truck stops and holes in the wall. It's all about the places where you can get an unassuming mountain of food that somehow knocks your socks off, or a breakfast that far exceeds the expectations for the price tag, or the mom and pop that is far better than it has any reason to be.

I live in the Rockies, in an old railroad-centric town that has very little to do these days with the railroads. While it's still a common stop for truck drivers, it doesn't have much attraction to the railroad or tourist crowd. But there are the vestiges of that old culture still around, these dives that served that very specific slice of our population, that have somehow continued to live and even thrive despite changing circumstances.

You can mock it, you can crap on it, but I guarantee I can truck on down to one of these places and get a breakfast that will absolutely decimate what you can get at a Denny's or a Perkin's or an IHOP. A plate of hashed browns loaded with browned gravy, three eggs served to order, toast or scone or biscuit made to order with butter and huckleberry jam, and a side of bacon or sausage or pit ham... that shit will legit run me about $8 to this day, in a time where I could expect to pay $12-15 at your normal chain.

The "elite" likes to shit on midwestern culture because it isn't sophisticated, but give me a meal that's served to working-class folks at a reasonable price over some marked-up garbage that's twice? Shit, I'll take that any day and twice on Sunday.

Eh. I used to see ambrosia salad at salad bars back in pennsylvania in the 90s, but I never saw anyone bring it to a holiday. The recipes were more popular back when fresh fruit wasn't as available and canned and boxed foods were more popular with the working class. Just the fact that watergate has nuts in it was a bit of a flex. Different now obviously. For impoverished people you can more easily just serve a frozen dessert or something from the bakery part of a grocery store if you need a cheap dessert.

I do like ambrosia and watergate, btw. If you have an opportunity to try it you might give it a shot. They're supposed to be served in small portions so don't pig out. I wouldn't suggest making it unless you're going to a novelty party though. If you don't like it you'll be stuck with a big batch.
