I made spicy Italian veggie soup. Also hello, I'm running away from my home which is /cgl/ for the night and then I'll go back to /cgl/ before sunrise

it's delicious! and pretty healthy. I used the hellofresh recipe as a starting point and got what I'd need to make it at home without the meal kit, and changed a few things around to make it better (I use white onion instead of yellow bc I like it more, and I use a lot more basil/oregano than HF calls for, and I sautee about 3-4 cloves of minced garlic with the onions/carrots at the start). instead of broth concentrates+water you can just use broth

DESU the recipe on the site looks a little bit more complex for my taste

the italian seasoning is 1 part parsley flakes, 1 p oregano, 1 p basil, and 1 p black pepper but I season to taste. I've always subbed out the butter and used evoo. I skip parm, my soup is 100% vegan

and I cook for 2 ppl, the recipe is for 2 servings

The last soup like thing I made was sausage gravy for biscuits and gravy, I don't have pics but I used a pastry cutter to break up the sausage this time. If you want really caramelized bits of sausage in every bite it's a good method.
