Why can't I ever get homemade Chinese food to taste anything like takeout? Can it be the recipes I'm finding? I use all the right ingredients. Does anyone else have this problem?

The real secret that I learned after many years of trying to make Chinese food at home, is that Chinese restaurants use special high heat burners, capable of reaching 600-700 degrees. All the stir fried or just fried dishes are being cooked in this heat, which gives the food a smokey flavor you can't duplicate at home. So basically, I can make really good Chinese food for it being homemade, but still can't match my favorite dishes from my favorite restaurants.

What I remember as chinese food growing up as a young kid in Hong Kong

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. Like what kind of idiot decided 2 sticks is the most practical way to eat grains of fucking rice. Starving Nigerians who eat grass have a better diet than the average chinese.

That's true. My dad used to do sanitary control for the state back in his twenties.
One control took place at the Chinese restaurant of the Hilton hotel in Geneva.
While it was mostly clean he found out the Chinese cooks had rigged the friers to go above the limits. Which is both dangerous for fire risks and health risks since apparently at such heats the oil forms complex molecules dangerous for humans or whatever.
The walls were also plastered with evaporated oil because of that.

I started following the channel Souped Up Recipes, she has a lot of techniques to make anywhere from authentic chinese food to american style takeout.

I find the key is prepping/marinating the meats properly. If you don't velvet the beef it comes out completely different.
