I'm from Texas and I've been to Mexico, Guatemala and Costa Rica. The central American food south of Mexico is actually pretty plain and bland compared to tex mex or 'authentic' Mexican. Lots of beans, rice and plantains. The fried chicken in Guatemala is pretty good, both from national treasure Pollo Campero and the various street vendors I tried in Panajachel and Antigua de Guatemala. When I went to a remote hostel in lanquin they didn't have much meat at all, was mostly vegetarian plus eggs. I haven't been to South America but from what I've seen on TV and had at local restaurants claiming to be Brazilian or Argentine style it seems a whole lot better than C.A.
