Boil a few more, peel em, drop em in ice water, once they're nice and cold, pat dry with a paper towel, chop em up, cup of mayo, a little chopped white onions, salt and pepper to taste, mash it all together and serve on toasted sourdough, with a slice of tomato, maybe even a piece of lettuce if you're feeling extra fancy.
Some people also put relish in their egg salad but I hate pickles, the mayo is already kinda sweet and tart enough. It's finally warm enough here to open my windows and I made this for lunch. It's only 60 but that's a welcome change from the past few months.

>add some salt and sugar and dissolve it in the water and vinegar
>put your peeled eggs in a jar
>pour 1/4 cup balsamic on the eggs, shake up the jar to get the balsamic all over them

>wait 3-4 days
