I prepare vegetables all kinds of ways. I have a garden every year so I generally like to grow all kinds of species and varieties of vegetables and fruits. I also forage and enjoy adding what I find to my recipies. Steam, fried, grilled, candied, curried, roasted, raw, marinated, dried, pickled, you name it I do it or I will consider doing it that way. And I'm probably less wasteful with them than most vegetarians are. I wash my vegetable scraps and store it in a bag in the freezer until its full, then I slow cook it all and and strain out the soilds for free vegetable broth. Makes the solids easier to break down in compost too.

Pretty much this. My sibling is a vegan and when I told them I was practicing permacultrue and small scale regenerative ag that immediately told me I was going to fail and that what I was doing was disgusting (even though a large part of what I do is garden)

Humans are omnivores. You generally don't see vegetarian/vegan diets being recommended by scientific groups for optimal health anymore, they say with a properly planned diet you can avoid deficiencies but for optimal health you should still consume some animal products. It's probably impossible to make everyone become vegetarian/vegan.

Lab-grown meat has more potential to fix some of those problems though. As long as it can match the real thing in flavor/texture/nutrition a lot of people will happily switch to eating that instead.

I think without a hardcore religion, it's hard to ethically justify meat eating in the long run.
