I have a japanese market near my house that sells tuna collar, might be the best piece of fish i had.

I made udon, tuna collar, and like a korean bbq pork belly/asian slaw thing. Not traditional japanese food, but it turned out great.

I feel like it is so easy to develop flavors in japanese food so quickly. Making a dashi from katsobushi and kombu takes like 30min and is super flavorful. Great as a broth for the udon. Shit is cash money

I live in Japan and people here genuinely think that corn on pizza is delicious and some sort of hidden italian delicacy. People here are really fucking nuts about italian food but can never remotely cook anything like it. There are loads upon loads of "italian" restaurants here but when you go in it's always some weird fucking japanese ripoff where they fuck up all of the dishes by adding jap shit like raw squid and eel and shit to it and then they try to fucking play it off as "real italian food". It doesn't help that people here don't know what normal bread or cheese is. It's all fucking gross. I have not had any normal-tasting cheese in all the time I've lived here, and good bread is about as rare as a properly paid salaryman. These people are born on this island, they will live their whole lives on this island, and they will die on this island without ever tasting real bread or cheese in their life and that's just sort of sad. The worst part is that because no japanese person actually knows what real italian food is like, nobody can call restaurants out on this bullshit, everyone eats it all up and calls it "honto ni umaiiiii uwuwuwu" and everyone thinks this is what real italian food is like. It's just sad. "Oh rettsu addu fishu eggu andu seaweedu to pasta carbonara don't u kno this is how rearu itarian peeporu eat!". The worst part for me is that japan doesn't just massacre classic italian food like this, but they also do it with every other country's cuisine imaginable. French, spanish, mexican, turkish, you name it. Zuboraya in Dotonbori, very famous fugu restaurant, went out of business last year due to chinkflu restrictions making them unable to serve customers. Ironically, last year was its 100th anniversary. Now you can only eat there in the Yakuza game series.

Owner was cool as fuck; when he realized the restaurant couldn’t survive the mandated closure, he reallocated all operating funds normally used for food/maintenance/etc to payroll, and gave all staff full salaries for several months until the money ran out.

I love those too, but I can see why the owner took the direction he did.
That part of Shirahama in particular has more of a modern vibe because the big attraction is the sandy beach, to the point that Shirahama Beach has some sort of “sister beach” status with Waikiki Beach. It’s about the farthest south you can go without leaving Honshu.
So Japanese don’t go there to experience “historical Japan”, and that type of ryokan would be awkwardly out of place.

Two extremely common herbs added to hotpot are mizuna and shingiku, but good fukkin luck finding them outside Japan. I’m currently growing my own.
Cabbage and sprouts are almost always added.
Kimchi is also commonly added to nabe/hotpot, but doing it in the authentic Japanese way requires using kimchi that is produced in Japan (or your country of residence), while being sure to remark during both cooking and eating how funny it is your own country is better at making Korea’s “national food” than Korea.

The rest is just whatever. Tofu (regular or fried), meat of choice, leek, spinach, lotus root, it’s all good.
