The flavor of garlic mellows out when you render it and cook it up minced real nice, so I never understood recipes that are afraid of it like its going to turn the recipe into nuclear dragons breath

Always double the amount of garlic in any recipe.
Same goes for things like butter, lard, pepper, or hot peppers. If you don't you're probably a woman, or a womanly man.

Because its flavour completely disappears when you boil it for more than 20 minutes or so. Any stew, braise, soup or stock which calls for garlic will result in a final product with no added flavour from the garlic whatsoever.
Garlic is for eating raw, frying, roasting, and flavouring oil/butter/fat with

the problem with overdoing garlic is that while the dish is still edible (unless you used it raw) and probably tasty, you rob it of its more complex and subtle flavors because the garlic taste is too dominant

Which is why you add it at the end along with chives once you turned off the heat, allowing it to cook only lightly on the heat from the stew.

This is a good tip, same goes for all soft herbs , and even some of the woody ones too depending on the kind of flavour you're going for.
Do you crush your garlic into a paste to add at the end? Or just chop/slice it finely?

Salt is possibly the most important ingredient in cooking and no, adding salt to an already prepared dish is not the same as cooking with salt.

Garlic itself tastes good, and when cooked on high heat mellows out a lot. For those with softer palettes.
So people just dump tons of it in there thinking they're making the food taste better. All they're doing is making it taste like garlic.

I eat garlic and onion nearly every night and haven't used soap unless I'm actually dirty or covered in grease almost ever and I smell like nothing. I've had some friends literally get right up against me and sniff me because they're surprised I smell like nothing but clean water.

Just don't be a gross fat piece of shit and bathe regularly, garlic and onions don't really make you smell. Bad hygiene does.

ive never used a recipe's measurements in my life unless its a cooking science related recipe like baking or sauce making. even with sauces Ive got a good enough feel for it unless I really really want it to be as close to the writers vision as possible. Otherwise, I know what I like and know cooking well enough to go off of my senses.

Overused maybe, especially by people who think adding 4 more cloves is going to make their sauce taste better when they're going to be simmering the shit out of it anyway. The amount of time you cook it for makes much more difference

Try putting a clove in the microwave for only 10 seconds and eat it. Then test it out with 15, 20 and 25 seconds. The fresh spiciness goes away rapidly when just a little heat. So if you want that fresh flavor add after it's off the heat, otherwise just use garlic powder.

Garlic does not belong in some dishes. And some people think you're supposed to garlic press everything so they butcher the food. Give it respect and it will love you back.
