What are some actually tasty vegetarian recipes? I'm talking healthy stuff with greens and such, not cacio e pepe etc. (I've got nothing against it but I'm trying to please my gf).

I find 99% of vegetarian blogshitter recipes to be downright disgusting. So I'm looking for tried and true classics from any world cuisine, e.g. ratatouille and palak paneer maybe.

Learn to use mushrooms to replace meat sources, Ginger can help out recipes that seem to lack a full flavor and black beans can be used in most things to fulfill a protein source. The biggest thing to look out for is over-relying on sugar in recipes.

Just look for a certain type. A girl can love animals and eat them, but a vegetarian shows a certain kind of love. IMO they generally aren't actually interested in learning about animals, they just want to admire how "cute" they are. I would definitely say I am interested deeply interested in the specifics of animals. I always learn something new about them every day.

A girl who won't become vegetarian will probably be a bit more laid back, less neurotic if you will. She can still dress nice and wear makeup and be pretty, but she's not going to be super interested in getting validation from others and is more likely to run on logic as opposed to emotion.

If I were you, I would just weed out vegetarian girls. If you cant enjoy a nice steak with her she's not worth your time. There are plenty of hot meat eating women, and because of the extra iron and calcium and cholesterol in their diet they tend to be more mentally stable and have higher energy.

For a pasta dish I would make a tomato sauce with mushrooms. I grew golden oyster mushrooms and that sautéed in butter with onions and garlic is a great addition to a tomato sauce with fresh basil and oregano. Just make sure to put in twice what you think you need because they shrink a lot. But the taste and texture is very meaty.

A lot of restaurant-aimed veggie curry is just swimming in oil/ghee and sugar. Seasoning's one thing, but picking the recipe or product loaded with (most likely unsaturated) fats, sugars/sugar-alcohols and enough salt to turn a camel into jerky is a separate can of meat substitute.

If you want to make something like rapini actually taste good as the highlight in a dish, you'll need to throw some stuff at it - carrot and tomato at least, but chances are there will be oil, and there might be sugar, and the resulting sloppa might need enough salt to make pemmican out of water buffalo. At that point, you're still eating vegetarian/vegan, but it's certainly no healthier than a Denver omelette.

What are some vegetarian and vegan dishes that feel hearty and filling? Preferably not a soup, stew, slop, or salad either.

It's probably because of regularly eating meat but its hard to substitute that level of filling with vegetables. I'm not sure if its the chewing or the fat. I'm trying to expand my horizons but I feel like I end up repeating the same staples: falafel, eggplant parm, quiche, paneer, spanakopita. I've had good tofu in restaurants but haven't been able to cook it satisfyingly well yet.

I know its dumb people ate whatever little they had throughout human history but I'm so used to biting down on a piece of meat for lunch and dinner that its hard to replace that satisfaction. Falafel is my go to vegetarian dish but I want more options.

anything that isn't slop is going to be somewhere along the lines of a falafel - mashed up stuff that's fried or baked in patties so as not to be wet. You can make a pretty alright black bean burger with some black beans, mushrooms, garlic, beets, cumin, paprika, thyme, salt, pepper and a little cornstarch... but it's basically falafel with extra steps.

Roast parsnips are great and simple, but they're very much just a veggie, no matter how much stuff you put in with them, or how many taters you serve them with.

For your own tofu, get the extra firm stuff, drain off the liquid, poke a few holes and marinate it to give it some flavour (or serve it with/in something saucy), and either fry slices or cubes as is, or dredge in flour/cornstarch and (deep) fry for something more chicken nugget-esque.

The easiest, hearty veggie dishes are stews, curries and pasta. All of which are sloppa on a plate at heart.

I think you hit the nail on the head with regards to wetness. Vegetables are 90-95% water and when cooked its either wet or its dehydrated, its hard to get a good balance on water content. I've had grilled cabbage "steaks" that were decent which probably were somewhere in-between. Beans and legumes when soaked and cooked are easily around 60-70% water which is around the same as meat when cooked.

I guess I'll try making black bean burgs sometime. I also want to try tempeh which I've never had.
