Pic related is a Northern German roast. Small pork chunks heavily seasoned with pimento, juniper, cloves and bay leaves, but also salt and pepper obviously, roasted in lard or clarified butter. For the sauce you take out the meat and also roast some onions, deglace with beer or water, put back in the meat and let it simmer for a few hours. When ready thicken the sauce with whatever you want and serve it with red cabbage and potatoes. Mustard goes also very well with it.
The small pieces of meat come out much more tender and juicy than a regular big one piece roast. It's almost pulled pork like.
