couple weeks ago I was getting into shepard's pie, started making something I call "vaquero's pie" with taco-seasoning in the mince (with onion+bellpepper instead of onion+peas+carrot) refried beans instead of potatoes, and rotel-queso-dip for topping.
it was sloppa, but it was tasty sloppa. served with chopped-spinach-and-diced-tomato salad.

Mexican rice that I add stuff too
>Fry diced onion
>When onion starts to change colour add pre rinsed rice
>Make sure rice gets coated in oil
>When rice has started browning add chopped garlic
>Fry until fragrant
>Add chopped jalapenos, salt, pepper, ground coriander, smoked paprika and ground cumin
>Cook for a minute or 2
>Pour over a can of Tomatoes that's been blitzed in the processor and chicken stock
>Cook with lid on until liquid has evaporated
>Take off the heat and leave for 5 minutes
>Stir through corn kernels, diced green capsicum, black beans, chopped coriander and lime juice
I'll have that with a couple sunny side up eggs on top and some avocado on the side or some sliced steak. Also good reheated with some cheese on top.

This is the directions on every single package of taco seasoning. You're straining away fat and then adding non fat moisture for the seasoning to dissolve and then diffuse into the meat. The result is moist and flavorful mince beef that is not overly greasy. I personally skip the strain step if I'm using any beef 90% or more lean, which is the usual since I prefer using Nolan Ryan™ ground sirloin.
