Tartar sauce is actually really good for fried seafood, I avoided it for a long time because of a childish sense of "eww weird sauce" but it's dank

You do tartar for most fish if you want, and then you use cocktail for shrimp. It's pretty cut and dry. You might use just a tiny bit of cocktail for raw oysters, but they really are better off alone. Lemon is optional.
