That depends. Are other foods that are currently not nearly as widely consumed as either allowed to fill in the gap afterwards? Because if that's the case, you can just choose chicken and other, similar poultry like duck and turkey will quickly fill in the vacuum and basically nothing changes. On the other hand if nothing is allowed to fill the gap, I have to go with cows because I'm not giving up eggs for any meat.

Remove chicken. The most similar "cow-like" animal I can think of in terms of meat is buffalo, which comes close-ish, but you'd also lose milk and by extension cream and butter, which would be huge blows to cuisine in general.

Chicken on the other hand can easily be replaced by pheasant, quail, rabbit, or turkey, and duck eggs can replace chicken eggs without issue.
