here's the real poop (inb4 reddit spacing):

>mix ingredients for as short an amount of time as possible using paddle attachment

>brown butter, then put butter in fridge until cool before using in dough

>add chocolate chips last, fold them in with a spatula until just combined, don't overmix

>stick dough in fridge for at least an hour and up to 24 hours

>use a disher to get even sized cookies

>if making big cookies, cook at high temp (400ish) for a short amount of time (10 minutes or so)
