I decided to make some pico de gallo today for the first time. I did a good job in dicing everything very finely. But when it was time to dice the tomatoes I was already bored with cutting so I put them in the mixer. Big mistake as it turned everything into soup.

But the biggest problem was that it was very bitter. Why did that happen? I bought ripe tomatoes. Sucks to have spent so much time and money only for it to taste like feces

Most store-bought tomatoes don't have much flavor to them anyway, and blending them like that will really break down the cell walls and turn them into mushy white noise. If you didn't get on the vine, try those, or next time try some cherry, pear, or heirloom miniature tomatoes, those tend to hold better flavor.

Also, pico really shouldn't be blended. Make some salsa roja if you just wanna check everything into your food processor.

cutting something with a knife is much different than throwing it into a blender op. when you dice shit with a presumably sharp knife youre retaining the integrity of the produce which will keep the juices from spilling out and mixing with shit in concentrations it ought not to. my guess is some chemical reaction from the acidity of the tomato juice with something in your pico assuming you didn't throw in any weird shit. maybe how finely you diced your pico ended up releasing more chemicals like sulfur from the onion.

You know, I think you're right. I think actually I'm allergic too it because when I chopped it I felt it was harder to breath and my eyelids felt like they did swell a little. Can I substitute it with something else next time or just skip it?

Bitterness isn’t really from tomatoes, although higher quality tomatoes make a large difference in flavor.

Probably was either garlic, cilantro, or maybe even the onions if you’re a huge pussy. Sugar masks it, sugar can’t neutralize anything chemically. There isn’t any weird reaction or any funny business going on chemically. Your shit tastes like shit, fix it.
