I can only give very general ideas about pairing from what I've read; I haven't been able to drink much sake unfortunately. Apparently a nice aged sake goes well with cheese or spicier foods. A ginjo or daiginjo would suit salad, fruit, sashimi (particularly white fish) or something like carpaccio.
