If you're in the US; Russet for baking, mashing, hash browns, and frying. Generally these are also great for potato salad.

Yukon gold/yellow potatoes are good for roasting, and adding a couple to a russet mash or potato soup isn't the worst thing. Also great boiled and served without peeling them.

Red potatoes are shit and shouldn't be used by anyone. Too bitter, too waxy. They make shit home fries, and worse potato salad. Some of the worst mash too.

Takes me 45 minutes with airfryer.
1. Wash potato thoroughly, if still dirty, soak em in water and 10% vinegar solution for 10 minutes then wash em again with high pressure water. 2. Nuke some water with salt, Till salt dissolves, and water should taste like ocean. I use black salt. 3. Prick 2 holes with sewing needle. 4. Coat potato in salt water or just use brush to apply salt water. 5. bake at 200°c for 45 minutes. Shake em every 15 minute.
