If you’re getting it from a styrofoam package in a generic grocery store you’re putting yourself at risk, if you get something like kibbeh from a middle eastern grocery store they are extremely careful to make sure the meat is fresh and there is no cross contamination.

Animals are filled with bacteria and parasites.
All raw meat has them

You cook to 150F or you flash freeze to kill it.
If you were to eat raw meat, a fresh kill is most likely for you to dodge a bullet.
When meat gets to a store, its on average 10-14 days dead before it gets ground up and put onto the shelf.
If its in a tube, its been frozen and much longer.

Mince gets put through a grinder, the blades and every piece of the grinder are working for hours and hours, touching all sorts of bacteria in all sorts of temperatures. Its a nightmare in terms of health.
Ground beef should not be eaten rare or raw, though people still do it.

Steak is different because you sear the bacteria on the outsides, and you havent let the bacteria inside the actual meat like you should have grinding it up. So its more likely to be safe eaten pretty rare.

Pretty much, unless you kill the cow itself, dont eat it raw. And if you do kill the cow itself, you are still being exposed to tapeworm and other potential parasites who would love to live in your intestines.

When I make jerky from steak I eat the raw pieces that are shaped too strangely, are too small or whatever. I don't get the fascination with raw meat. It tastes really bland compared to cooked. At least fish is bland either way so it works with sushi, sashimi etc. Raw beef tastes like nothing/whatever you season it with.
