Hey /ck/ do you have any advice for meal prepping? Also it should not be like pic related, I imagine it can get boring quick. This pandemic has been really getting to me and I want to make things easier for me while cooking.

Some things I want from this is to have a variety of food, not the same thing over and over. What are some dishes that you can almost put any leftovers in like fried rice or a frittata?

I don't like doing big batches of food and saving them for days, even less if I have to reheat them at a microwave. You should try doing sandwiches: quick to make and you could try different types of meat through the days, like smoked turkey or roast beef.

As far as having a wide variety of meals throughout the week, I've been reliant on freezing freezer-friendly meal leftovers for later (Whether that be in a day or in a week or in a month). By building up a "stockpile" of frozen foods, you can get some options for those nights where you can't be assed to cook.

Consider taking up stews and curries. There are a wide variety of slow simmered recipes out there that you can put all sorts of meats and veggies into. Freeze your leftover stew/curry for later, they typically keep well. I've made one-off chilis with leftover chicken or stew beef to great results.

I've found that smoked BBQ foods (i.e. pulled pork, brisket, etc) keep almost perfectly in the freezer (ofc it's not as good as the day you smoked it, but it's pretty close) and are easy to stockpile because of how large the cuts are. You can use the meat to make BBQ sandwiches or omelets or even rice bowls with beans.

I usually think sous vide is a retarded meme, but I've found to be very useful for cooking meats from frozen. Does a good job on frozen chicken breasts that I've pre-seasoned before freezing. Frozen steaks too. Some sous vides have a delayed-start so you can set everything up before you go to work and have your steak ready the moment you get home.

As far as using ingredient leftovers, I enjoy stir fries quite a bit too. Similar to how you cook veggies and protein for fried rice, just without the rice. You can be creative with using sauces and spices.

You can also make tacos and burrito filling too. You toss most leftover ingredients into a pan or griddle (chicken, beef, onions, etc.) and quickly saute them in mexican spices and get easy filling that you can warm up and eat at work with tortillas.

The most time efficient meal prep is chicken breast made with a pressure cooker (cook it in stock, with more added salt and seasoning than you think you need), rice and vegetables.
Portion out the chicken/rice in advance and add fresh vegetables in the morning. I suppose you could rotate meats too if you wanted to, and you could use bread/potatoes as a carb source.
