Can I ask a question about browning the meat for chili? I feel like most people sorta steam cook it in the pan, making it more gray than anything. I feel like it would be much better to get a darker brown Maillard reaction on the ground beef. Any tips for getting that with ground beef, is it just cooking it in smaller batches? Is a Maillard reaction even desirable for chili?

Yes getting a nice sear on the beef you cook absolutely improves the end product. I typically use slices of chuck instead of ground beef, and sear them similarly to how you would pan fry steaks, deglazing with beer after each batch. This is easy to do with chuck, not sure how feasible it would be with ground beef but I bet you could get it to brown correctly if you used a relatively thin layer of beef in your pan.
