I have a net of brussel sprouts and I am about to cook it.
Usually what I did was frying some diced bacon in a pan and just adding the sprout halves and season. However, I don't have any bacon right now. What are good meatless recipes for brussel sprouts?

Honestly one of the best I’ve had, and it sounds gay, was salt water blanched brusslels sprouts, where they were torn off the little stem, then tossed with grated medium boiled egg, green onions, and pickled shallots with some kind of creme fraiche dressing and black pepper. You don’t always have to eat them whole, they’re still a salad green.

i made some yesterday. they were cut in halves, pan fried in duck fat, seasoned and then plated with a drizzle of maple syrup
honestly its better to just use any oil desu. get the edges crisp
the maple syrup makes them amazing

I'm roasting some later and putting a vinegary honey mustard sauce on them for the last few minutes in the oven. I'll probably mix some soy sauce in with it too.
Maybe I'll try to pan fry them a bit first.

Always roast with some oil. Olive oil is best.
You can't out bacon in I know but some prosciutto and pine nuts or chestnuts is my favourite. You want something to leak even more oil in and fry those fuckers.
Always garlic if you have it.

At the least, roast with oil.

Pan fry the shit outta them in bacon grease until theyre falling apart. Then strain discard grease and place sprouts in to bowl. Add parmesan cheese and avocado mayo and pepper. Add garlic jalapeno stuffed olives.

OP here, I did it.
I halved them and threw them in a casserole dish where I mixed them with oil, chopped garlic, salt, pepper and herbs. Covered with tinfoil with some holes punched into, into the oven for half an hour or so. Was absolutely delicious.

fpbp, for me it's b sprouts, tiny potatoes, and carrots, they all finish about the same time too. When you roast b sprouts well, they come out really creamy and if you're lazy, a toaster oven will do them good
