/fit/itzen here.

Today I made Food™
>Does it nourish me?
Yes
>Does it have flavor?
No.

Despite adding a lot of spices it has no flavor. I was just trying to come up with some kind of bulk cheap food with a lot of protein. If I drown it in hot sauce it's pretty good.

Kinda cringe but this is the easiest way to make basic meal prep shit palatable.
Also if you're adding spices and not getting flavor you probably need some acidity or salt. That's probably why the hot sauce helps.

I can splurge on expensive ingredients and make a fantastic meal for a date or something. And I own Gordon Ramsey's cookbook so it's not like I don't have recipes for good food. But I don't know what to make for just my day to day non-expensive food.

Don't mishmash everything together except for stews but you're not on that level of cooking yet. Learn to prepare your meats, carbs and veggies separately first, these are the very basics. Learn to fry things, to do that you put fat in a pan and let it get hot. You can put almost anything in a pan, it generally improves taste. Some meats like chicken and pork should be cooked fully, but you don't usually eat the bones with, no matter how soft they are. Use salt in the cooking water of your rice, potatoes, pasta. Then salt some more. Chili powder is insufficient as your only spice, it doesn't add any flavor only spicyness, try dried herbs, pepper and nutmeg instead. Learn to cherish onions and garlic, they're healthy and give lots of flavor. Then lastly use wine and vinegar (not lots) for taste and acidity in your food, this gives it important balance. Good luck.

It's great that you've taken interest in cooking, but jesus christ you are off to a bad start.
Start simple- roasted meats and veggies are a good place to start, and you can use it as an opportunity to figure out what different spices and ingredients taste like. You can also start with stovetop braising, where you can adjust according to taste and cook time/ingredient proportions don't matter as much (but please, for the love of god, never make anything like this again).
