Steam melts cheese much quicker than hot air. See >>15447273 and >>15447282 to make >>15447297 which are simply toasting plus 1tbs water plus cover, which melts any cheese. The power of steam.

when it's basically done cooking and you can turn the stove off, put on the cheese, then put the lid on the pan so the trapped heat melts the cheese.

If you're using shredded cheese, grate it early and put it on a dish next to your frying pan so it can at least reach room temperature by the time you're ready to use it, that will help it melt quicker. If processed sliced cheese, same deal, just leave it wrapped on the stove so it will warm up to room temp at least by the time your'e ready to put it on yoru food, taht will help it melt.
