I can't stand Babish. His recipes are always way above and beyond what any normal home chef would be willing to bother with and it's all for flourish and flexing. His voice also bothers me, it comes off as not genuine.

Also you really can't shortcut risotto so I'm glad he actually did it the traditional way at the end. I worked the risotto station for a year at a Venetian small plates restaurant, and the menu straight up says "please allow 30 minutes" in the risotto section.
