Both. Ramsay is a guy who got lucky because he managed to get on TV when he was running his boomer restauraunt catering to retards who take culinary advice from a car tire manafacturer. Not that he was cooking bad things there, but you're basically looking at French cuisine there, copy pasted as done by great French chefs. Listening to a Brit criticise food or asking one for advice is like trying to get literary advice from somebody who thinks Harry Potter is good literature. The pizza is an abomination. On top of the pizza. You don't need to drench the plate in MUHCHIZZZZ. You use fresh mozzarella, so drenching it would be utterly disgusting, besides I like tasting the tomato sauce. I posted a very basic type of pizza, but there's hundred of different topping combinations to choose from anyways.

This guy could fix his pizza, this is how:

1. Remove somewhere between 2-4 OZ from his dough balls. Given their thickness @ 16 inches I'm going to guess the doughball is somewhere between 18 and 20 OZ. The rule of thumb is 1 OZ per inch of pizza for normal NY style crust. If they're that thick at 16 inches he's running his dough balls too large and ultimately fucking himself on product, since every 8th dough ball contains enough overage to make 1+ extra pizzas.

2. He has puddles of oil on his pizza. This can be caused by an improper baker's percentage of water to flour and other ingredients. For a NY style pizza it should be at about 63-68% generally, and I'd be willing to bet he's higher than that, and his wetter dough might be a little shittier about baking quickly and drying out sufficiently.

3. Reduce hydration via cheese - his mozzarella is not a good enough low moisture cheese. It's leaving oil and stopping the crust from fully cooking on the bottom.

4. Bake longer - it's clear that it's not baked long enough. It needed another 2 minutes more than likely to crisp the crust better, complete the cooking process for the wet dough, get a bit of crispyness on the outsides, and slightly brown the cheese in spots.

I see people like this guy all the time who are running a pizza restaurant and I want to know where the fuck they got their recipe from because they're serving up subpar shit that could easily be tweaked and fixed with very little effort.

Yes, that's likely also a contributing factor. The sausage should always be pre-cooked, since the short time in the oven to bake is not nearly enough time to thoroughly cook sausage. I'm not sure what this guy is doing with his ingredient prep but multiple things are simply off.
