mexican chiles provide such a unique depth of flavor. It really tastes like what their culture and land looks like its crazy. Plus they contrast flavor and texture well, very similarly to thai food. Most of the food is salty, fatty, savory, spicy and sour all at once. Contrasting flavors and textures are pretty much what make good food good. Also as far as I know that entire region jumped on the spice trade game faster than pretty much all the other continents besides asia. Also historically impoverished civilizations tend to make the most out of what they have. They figured out how to make pretty much every part of pig and cow taste atleast better than youd expect.

Seafood is quite good too. I just love the flavor combinations and everything is so instant. You can make intense flavors in 2 minutes with a fresh salsa, it’s hard to compete with that instant gratification.

You do realize that most of the Mexican population are mostly descended from Spaniards, right? Only about 19% of the Mexican population claims to be descended from native blood. Thus the food you're complaining about is the result of the Spanish. Indigenous Mexican food was probably way different. For instance, they probably didn't have rice, which is very common in contemporary Mexican food.
