I envy you. Never could harvest the shellfish from the rocks and piers of my coast, because of red tide and bacteria from the septic tanks of houses. Fucking puget sound, beautiful region but they ruined it by letting people build houses within 5 miles of the sea.

They're good, but just a heads up, they have a gooey kind of texture due to the batter. But if made well, it's contrasted well by the crispy outside.

If you can't find the Chinese ones, Thai make a pretty similar oyster/mussel omelette called hoy tod.

I find they sometimes need a little somethin, but the oyster, scallop and mackerel farm I used to live close to was doing something magical with their tanks (obviously salinating for the scallops at least). I've never had seafood anywhere else that had as much flavour - terroir I guess? We worked out a pretty decent barter system - I'd make him a 15gal batch of beer in one of the test kettles at work every three months, and he'd give me about 10kg of scallops, 5kg of oysters, and all the mackerel I could handle (which was like 5kg tops if people wanted mackerel). We ate like fucking kings at that brewery... well... we ate like kings in the offices next door - we didn't eat anything in the brewery.
