cat meat has a funky taste

my local chinese place has pretty solid meat dishes, their beef is pretty good and their chicken is all white meat.


Its probably the meat they say it is, right?

Probably a mix of it being frozen, and over cooked.

A few reasons, actually. Third worlders actually enjoy gamier, gristlier and more dark meat (and organ meat) more than Americans, so they'll be using it like it's normal to do that.
There are some Chinese restaurants just operating on a cheapass profit margin and they cut corners, from watery broth, to minimal garnishes, to hamburger inside of pot stickers, to scant amount of more expensive nuts, more carbs than meat, more thick breading than meat, etc. Then, if you are in the know, there will be a few menu items that their menu that will state "white meat" where they can't honestly get away with low end cuts, like for the honey chicken, or just buy whole items like chicken wings, ribs, sausages, things that will be similar to raw. Don't be afraid to ask for "special won ton" and get a few shrimp thrown in there and more fresh bok choy, or extra green onion.
There are american style chinese restaurants that aren't necessarily a bad thing, just won't be sneaking any chicken feet into your soup, but rather will use only white meat chicken, and your meat is just more enjoyable, though not traditional Chinese.
Rather than a mirin wine marinated meat, and fresh ginger, it'll be some industrial pre-made marinade.
Sometimes it's just true that you get what you pay for, and if you are willing to spend a bit more and support businesses not cutting as many cheapass corners, then reward them with loyalty and keep them in business and spread the word.

Nah man, you need to raise them at home or the meat might be diseased. What you need is 1 healthy adult male cat, preferably from one of the larger breeds, and several adult females. They produce litter very fast and the kittens grow long and fat quickly, you butcher when they are 1 year old so it is more tender but still has enough meat to be worth while.

The belly is the best part, cut horizontally in the middle and on the side to separete the entire cut into 2 long strips, cut into equal squares, place on a spit and roast it over fire seasoned with herbs and spices of your choice. It literally melts in your mouth!

Just remenber, you can AND SHOULD treat your adult cats very well, like pets, but you should NOT treat the kittens the same way! You can pet them, squash em, smudge them, cuddle with them, but ultimately you need to remenber their purpose as food, so you can't get attached.

Also, be sure to feed them with fish and poultry, red meat is also pretty good but fish in particular and poultry have a really powerful effect to enhance the overall taste and quality of the meat, don't just feed them fucking kibbles!

The chicken always has this rubbery gelatinous texture to it. Pretty sure they do something to it to increase volume that makes it this way. Maybe water+gelatin that hardens so it doesn't just cook off.

Roast Pork. Roast Duck, BBQ Pork are nice options when your looking strictly for meat. There is plenty of options for non-saucy stir fry dishes too.

Cheap Chinese restaurants may reuse leftover meat for saucy dishes.

Which cuisine?

Cantonese cuisine have all sorts of dim sum (egg tarts, char siew bun, siew mai, salted egg yolk bun), roasted duck rice as well as all of the exotic meats that give Chinese food a bad rep

Central Chinese cuisine (Sichuan, Chongqing) have mala hot pots while as you go up north you'd encounter more noodles and dumplings and less of the weird stuffs

If you go nearer to the seaside especially around Shanghai you'd find more steamed fish dishes
