I can give you my recipe if you want it. It has worked very well for me and is relatively simple. For your specific quandaries

Brine
>season tendies like you were going to grill them with white pepper, paprika, nutmeg, salt, cayenne, and garlic powder
>pour in a half cup or so of pickle juice, a few dashes of louisiana hot sauce, then fill the rest up with buttermilk until everything is completely covered. Feel free to mix it up so all the pieces get and even coating.

>no batter only flour mixed with herbs, spices, and salt. You can use the same ingredients as you did with the brine. I normally add those in addition to an italian herb blend, black pepper, and anything else I’m feeling that day.

Fry temp
>350 degrees in a cast iron filled half way up or small pot with 1-2inches of oil

The tenders are battered, not just flour dredged. They actually have flavor without having to rely on a sauce crutch although you do get white gravy with them. The fries are a million times better, amongst the top fast food fries I've had. Ditto for their yeast rolls. Chicken Express has similar tenders but their sides aren't as good yet there's a bit more selection (like cheese sticks and other fried stuff). I'll take the Golden Chick/Chicken Express type tender over the Canes/Zaxby's type any day.

I've been making nugs with chicken thighs lately. I can get them for $0.79/lb and I reuse my oil so it's a really adorable meal. They stay so juicy. For dipping I've been experimenting with homemade mayo. Last time I did one egg, 4 garlic cloves minced with coarse salt, bout 2 tbsp fresh grated ginger, big splash of red wine vinegar, and 3/4 cup oil. I think they sign an agreement saying to only break character when you're completely out of sight and in employee area or something. That's basically how those "upbeat" places work.
