I made toasted baguettes topped with creme fraiche smoked salmon and fill and cracked pepper the other day. I left the bread in the oven too long and the toasted slices were hard as a brick. I had it on low though so they werent burned just way too dry. The creme fraiche moistened them perfectly. A little crunchy on the bottom and chewy on top. Maybe that's why there's cheese outside the sandwich. To offset the crunch?

How do I make it tasty? I've made it with bechamel and even with mornay and it's still not that good. I add mustard into the sauce and add extra cheese. It's just bland, even with the mustard, the nice ham, and properly made mornay.
