What is your choice in burger condiments? Ketchup and mustard is a very popular combination, but so is ketchup and mayo. Then you often have "special sauce" which is usually thousand island or something similar to it.

Sometimes I like shitty burgers with ketchup and mayo or ketchup and mustard. No memes. Mayo can also be mixed with other things based on the burger. Fancier mustards are good. Some burgers with BBQ sauce or glazes. Helps if you stop thinking of a burger as a burger. It's a meal in the form of a hands on food. What sauce do you want with your meal combination?

I’m open to most sauces and toppings, but I think it’s a mistake to put lettuce and tomato on a burger. any veggie that has a chance of becoming soggy in the burger is a bad time, so usually I prefer things like pickles/relish, onions, mushrooms, that kinda thing

Cast iron pan medium heat. smash burger with two cutting boards until thin. 2.5 minutes each side. add cheese and a few drops of water then cover with a lid to melt cheese. assemble following:

Top bun - potato bun
1 tsp thinly diced onion
(optional) thin layer of crispy/dry lettuce
white american cheese (steamed until gooey)
70/30 grassfed ground beef (rare but I get it from my farmer. seasoning is 1tsp of 86/14 salt to pepper blend)
thin layer homemade duckfat mayo

Is mustard on burgers a Texas thing, or a southern thing?

As someone who has lived in the western US his entire life, ketchup and mayo are the objectively correct burger condiments. A mixture that's primarily those things, like thousand island dressing, is also acceptable, but fundamentally changes the character of the burger.

Burgers may have ketchup and must not have mustard. Hot dogs may have mustard, and must not have ketchup. I didn't make the rules; if you don't like them get out.
