Try finding some roasted rapeseed / mustard seed oil. It'll have a flavor profile much more in line with chinese cooking.

I think it was a Harvard site I looked at which was saying certain vegetable oils are probably the healthiest and high trans-fat processed shortening is the worst, but that animal fats are probably neutral. It also seems like it's related to obesity, where obese people who have less animal fat in their diets didn't quite have as many problems as obese people who ate more animal fat, but that for average weight individuals it wasn't as much of a concern.
