OP, it's called cross contamination. While you are probably going to thoroughly cook the meat to safe temperatures, or at least the outside surfaces of meat, on the other hand, your cutting board, sink faucet handle/fridge handle, knife handle and tools will touch hands and food that won't be sanitized by the same level of cooking. The entire "don't wash meat" CDC recommendation to home cooks has to do with splashing juices onto surfaces around the sink to be cross contaminated later. This doesn't mean it's not a good idea to wash meat in the first place. When it's not a home cook, restaurants are smart enough to use big bins and ice water and thaw and wash chicken before it goes into marinades.

The #1 cause of hospital infections that lead to death is health workers not understanding this "sterile field" mentality through poor training and making mistakes.

Imagine right now being one of the 25% of people who need to get hospitalized from food poisoning during covid, full listeria or salmonella in this covid situation right now.

You often see chefs in videos handle raw meat and don't give a damn about germs, everyone really, from Ramsay patting out burgers, to Jamie, but if you watch people like Julia Child on Emeril, Pepin or Sara Molten, really smart technical instructors, you'll see they wash up, switch out equipment, pause filming, trade out already prepared and marinated second trays of food, etc.

With regard to hogs they had gatherings where they butchered them in late fall. Hams, shoulders and bellys were salted and hung to cure in the smoke house, sausages were ground and stuffed into intestines some to cure but others kept fresh since the weather was cold enough to keep for awhile. I had food poisoning from what I think was being unsafe with raw meat. It was fucking miserable. I spent 3 days moving between bed and the toilet. I had diarrhea that came on suddenly and frequently. I'd sometimes have diarrhea leak out of my ass just from things like rolling over in my bed or sitting up. I couldn't make it to the toilet in time once and made a huge disgusting mess in the hallway. I got dehydrated from shitting so much, I'd drink something and have liquid shooting out of my ass soon afterwards. It didn't matter how much water, Pedialyte, and Gatorade I drank, I just kept shitting it out. My stomach and colon were cramping and churning so badly it was hard to sleep. I ran a nasty fever and my whole body felt sore. After 3 days the steady stream of diarrhea slowed down, but it took another week to get back to normal.
