flair user here, the pavoni doesn't seem like that much of an upgrade to me, apparently you can only pull 2 shots before the group overheats and you have to use a smaller dose too.

Blends aren't entirely bad if the goal is to make a custom flavor. Also not all dark roasts get charcoal tier; though a good dark roast is harder to find than a light roast. The thing I keep hearing but have not personally compared (since I don't have access to a Comandante) is that the Comandante is better for pour overs than even the M47 equipped with the pour over burr. On the other hand, Kinu is better for espresso and is undeniably the more durable of the two, especially the Classic.
You really can't go wrong with any of the three versions of the M47 (or bonus points if you can get your hands on a Traveler). If I could point out a downside to the M47s that I've personally experienced, it's that the chaff can get stuck to the bottom of the burr a lot, but it's nothing a good tap on the grinder won't solve.

I have a new Kenyan that's been really challenging to roast. I do not like it at all before first crack, but it has a really late, rolling crack. First attempt I stopped it right afterwards (I guess) and my beans were really odd looking. Like half of each individual bean was light, half was dark. Evens out right after this, but goes right to second crack within a minute or two, even with the heat lowered. Third batch I finally roasted it okay. Tastes pretty good if I don't miss the narrow little window. Definitely some defects in the green–a few stray malformed mutants, although it's supposedly an AB grade. Luckily, I only bought a few pounds.

A mocha frappucino is still loaded with sugar. A grande has about 6-7 tablespoons of syrup in it. The seasonal drinks like salted caramel, peppermint mocha, etc have double that. If you are talking about a mocha latte, that's a little better because they don't put the frap base (syrup to help the ice blend) and they don't use the instant coffee mix that smells like fish. I recommend you get an iced mocha latte if you want a similar taste and if you must go to starbucks. I will say that espresso from starbucks tastes nothing like the real thing. I need to vent about how my mom makes coffee. We use a french press in our house. I'm usually up a few hours before she is and I will make a pot of coffee. Usually just regular Folgers, I'm simple when it comes to coffee. I'll boil the water and pour it over the grounds and stir it up, let it steep for about 5-10 minutes which is more than enough time to brew the coffee. My mom ends up waking up later and will put on a pot. The first annoying thing that she does is when she boils the water, she will let the kettle sit and whistle for a good 2-3 minutes before getting up to pour the water. A few times she has let it boil to the point where she has to refill it because it's not enough to fill the container. She can clearly hear it as she is just sitting on computer in the living room which is right next to the kitchen while she allows the kettle to scream. But once she pours the coffee, this is where my real problem begins. She doesn't stir the coffee and never has. But to make up for the lack of stirring she will let the coffee sit, unpressed for typically 30minutes to 2 hours but she has let it steep for even longer than that. The worst part is, she usually only ever has one cup out of the 2 cup press so I've gotten in the habit of drinking that second cup and even pouring and pressing the coffee myself. But if I go to press the coffee even after 10 minutes my mom will get upset with me claiming that "It needs to steep longer". I try explaining to her that it's already been plenty of time but she insists pressing it any sooner makes the coffee taste weak.

You don't have to get that one, but gooseneck and 1° temp control should be a must.

It would be worth a lot to be aware of those, so you know how little changes may affect your end-result.

Taking a spoon and giving it a swirl to detach grounds from the wall, right when you finished pouring to the highest point, may be your best bet here.

made my first successful cuban with the REMI today
i fucked up yesterday using way too fine a grind and i got a bunch of grounds in my coffee that tasted awful
used a coarser grind today and, although it's not dialed in, it tastes better than my regular cups already
gonna have to play around with the grind coarseness to really get the most out of this grinder

the grinding experience is really nice; the grinder is smooth and quick, and the hopper is really nice to use and doesn't have any static problems

Don't get too "locked in" to the grind you dial in. The sharp edges on your fresh burrs will roll over in about a month and the number you have dialed in will change. You're stepless now, so play around. Don't let a tick on the bottom of your grinder limit you.

Just did 3 small V60 pour overs to compare some new coffees.
Had some leftover grounds I mixed together and tried the single-pour method and that came out way better than I thought it would.
I think I even liked it more than the other pours I did.

Almost feel like all these "methods" are just people pulling stuff out of their ass and the differences are minimal, as long as your grind size, ratio and final drawdown time are good.
