I've never had AMAZING tofu, but I enjoy the tofu I make. Pressed, cubed, dumped in a Tupperware with bottled enchilada sauce marinade for ~2 days. Then oven-baked on parchment paper and served over cilantro-lime rice. Good eats for minimal effort

Even as someone who really likes to experiment with exotic foods and shit that's out of the typical comfort zone palate, I still can't stand tofu. The texture is mediocre and the flavor is just really weak umami.

I just recently learned that if you freeze tofu then press it it pulls a lot of the water out and makes it a lot more meat like. Haven't tried it yet though.
