One of my favorite take-to-work sandwiches is a ham and brie sandwich that I nuke about 30 seconds to take the chill out of the ham and cheese.
Ciabatta, kaiser, or nice crusty roll or toasted section of french bread, sliced ham, english mustard and some kind of jam or thick preserves, from apricot to raspberry to fig, or ginger. It's all good. So, it's tangy, hot, sweet, all at once with the funky cheese and salty smoky ham. Sometimes I just tuck in some arugula or spinach.

One of my local restaurants used to dip brie segments in batter, then deep fry them and serve the result up immediately with some cranberry sauce or jelly. You'd cut into it and this stream of scalding cheese would ooze out. Wonderful.
