Ty i raised, slaughtered, and butchered him myself. This is a different duck than the one i had for xmas. I salt cured that one and then dried the skin up. The meat was super tender and flavorful. I want to make duck prosciutto.

:3 It's okay, that's a different duck I used. Though I always use spices. No rosemary. I prefer marjoram along with salt and pepper.

The duck I did for Christmas had no marjoram, for some reason I couldn't find it. Fortunately I had fresh thyme which I put into the cavity of the bird, along with apples and onion, and also rested the bird on some fresh thyme when I roasted him. I should have taken a photo but I was busy that day. I salt cured the duck for a long time, about 36 hours. Then rinsed the duck out and let it dry for another 12 hours. Then I scored the skin, prepared vegetables. I used potatoes, the last buttercup squash from my garden, onion, and carrot. And of course I added some fresh ground pepper (I didn't salt because of the salt curing and it's a good thing I didnt)

I can tell you that my ducks never end up bland. Even if I didn't use spices the meat is so dark and rich it would still be flavorful.

I think this person might just be butthurt because the turkey they got for bong Christmas was rotten.

Nah man. I think about life and death all the time. I think about suffering too. Including animal suffering and the role humans play in animal husbandry and what makes a human have a healthy relationship with the life around them.

My conclusions and experiments all led to the same conclusion. Livestock is incredibly important, we need livestock just as much as livestock needs us. And our relationship with them needs to be healthy since it reflects our relationship with all life.

So I raised my own. It's a bit surreal looking at a bunch of cute baby animals and knowing that you are going to slaughter a bunch of them someday. But you shed those thoughts once you get to work and you learn about them, you don't feel any guilt, you don't have time. Your entire life is devoted to caring for these creatures, you see them express joy and work hard so you get to see that expression as much as possible. When you see them distressed it distresses you and you do everything in your power to avoid said stress.
When the day comes everything is planned out so there is as little stress and pain as possible. I have envisioned myself in my animals position many times.

I was really getting ready for guilt when big harvest came. But it never came. I gave the animal a good life and a quick and painless death. A "good" death maybe some would call it. Instead of guilt, I felt a strange sense of pride.

A vegan wouldn't understand. But now I'm obsessed with it. I want livestock that live a good life and never even see their death coming. I want their last moments to be filled with joy. A good meal on an empty belly, their last thoughts being how happy they are to get such delicious food, and then the eternal nothing that awaits us all.

i follwed this recipe pretty much verbatim

it renders a ton of delicious fat that was one mistake i made kind of not expecting it and wasting a bunch
the preboiling phase sort of helps hasten the rendering and makes the meat very tender and juicy and i'd imagine is an important step because a lot of people told me goose was greasy and this definitely was not.. but the whole boil in foil thing was kind of a giant pain in the ass and the stock that it produced was pretty weak especially since it's a deboned goose
next time i will try just steaming it in a pan before roasting and then make stock with all the bones separately
i will also only stuff the breast next time and make confit from the legs because the cooking time discrepancy is even wider than in say, chicken or turkey
the cooking times in the recipe i used are completely whack insane.. like 3 hours too long
i used a thermometer thank god but i still overcooked it a tiny bit in order to get the sear right on the skin
if i cooked it according to the times in the recipe the meal would have been completely destroyed
and i won't bother with the foie gras in the stuffing again because it's a waste of foie gras

next time i'll just make my own pate with the bird's giblets
i saved a bit of fat in a jar but i wish i saved more
i used the majority to make a giant vat of gravy which is pretty good gravy but still seems like a waste

all in all it came out well though, it's a lot like duck but even darker and fattier and with the meat stuffing is was a very rich, indulgent meal
