I'm French and my wife is Brazilian. Christmas is cancelled this year so it's just us. We're making:
- Caviar and vodka for appetizers
- Salpicao for starters
- Roast duck (with a pork, cranberry and crumbs-based farce) accompanied by Dauphinois Gratin for main dish, with pinot noir
- Brazilian pave and praline buche for dessert, with gewurztraminer
- vodka shot for digestive. I wanted a calvados but it's impossible to find them in this shithole of a country.

I usually do my ducks confit'd, so I hope I don't mess up the farce too much, nor the toothpick ties on the bird. At least I'll only have to disappoint 2 people if I mess up.

England here. Was planning to go to my parents but locked down with the gf instead. Went and bought bits to cook xmas lunch. First time doing the whole thing myself and cocked up timings last time so need to plan it properly. I bought myself a meat thermometer which arrived today which should be good.

For breakfast it's be smoked salmon and scrambled eggs on some nice bread served with bucks fizz (English sparkling wine + freshly squeezed OJ) For lunch:

-A turkey, probably either going to spatchcock this and maybe seperate the legs / wings and cook it like that. Brining it tomorrow. Basically doing Bon Appetit recipe from the cringy thanksgiving series last year.
-A ham, I usually do a big one from scratch but this is a ready made one from the supermarket, I think it just needs to be baked and glazed. It looks OK but it's very lean.
-Pork, apple and cranberry stuffing, pigs in blankets, streaky smoked bacon
-Roast potatoes in goosefat
-Roast pasnips and carrots glazed with honey and dijon mustard
-Sliced brussel spouts pan fried with diced bacon and horse chestnuts

I'll probably buy some green or french beans as it's a bit lacking on veg. Also might google a gravy recipe, I've got all the prerequisite ingredients to knock something up (wine, giblets, some amazing chicken stock in the freezer, butter, herbs, flour etc.)

Red cabbage would be my choice of additional veg with that lot.

There are quite a few Jamie Oliver Christmas programs on More4 you can watch for the gravy and turkey.

I'm doing very similar menu, and I'll prep most of it tomorrow. For timings, I'll cook the turkey. Once that's out potatoes go in the oven. Estimate about an hour for potatoes so everything else goes in the oven based on the potatoes taking an hour. Then everything should be ready at the same time.

That's a great suggestion actually. I'm not that keen on it myself but the gf is a big fan and I didn't realise she's not massively into turkey until after I bought it, so it seems fair. I'm hoping the turkey ends up good and because I've got a meat thermometer and I'm brining it there's no excuses for it being dry.
Thanks for the hints on the timing, that makes sense. Gives the meat time to rest and means there's enough space in the oven for everything else.

Hams are relatively easy to raise, you could give it a try. They eat damn near anything, no need to put your food leftovers in the trash ever again among other things which is nice.
You can also raise ducks and chicken yourself, also rather easy, as well as rabbits.
Goats are fine, too.
Cows are a much bigger pain, they require a lot of maintenance and a lot of manual handling depending on what you're aiming for specifically. Not worth it.

Needless to say that Christmas lunch with my family starts at 12.30 and it’s “over” at 18:30, but actually it never finishes because there’s always something to eat until it’s 23:00 and it’s time to go home.

I love how you guys eat. I bought a cookbook from a 1st generation itallian american and it describes her grndparents phillosophy on apertifs and digestivs. Her grandparents would never eat anything too hot or too cold. Italian americans have their own food which is over blown and it is great. Have you ever heard of fritelles? It was my favorite appatizer at a place that closed. It was fried dough with I think fontina cheese in the middle, served with marinara

Yes, there are many variants depending on where you eat them, as always here.

The ones you used to eat sounds like “pizzelle”, basically fried pizza dough shaped into balls or small pizza with tomato sauce on top and basil. Usually the cheese is skipped but it really depends on the place and who makes them.

My favourite variant is fried pizza dough with minced seaweed.

Thanks for replying. These were a fried dough with a texture between pizza and pastry with cheese, which I think was fontina. It was basically a ball of cheese wrapped in a light fried dough. Sound familiar at all?

Your description reminds me of an obscure dish you’ve never heard of called “Sciatt” but it doesn’t have pizza dough, it’s literally a cube of cheese covered in a batter made with buckwheat flour and deep fried.

https://youtu.be/8Ul51b9CSF8

Of course it’s unrelated to your request but long story short: you may have found a variation/custom variant of fried pizza dough “pizzelle” or whatever they’re called in the dialect of the region/town the recipe you tried was adapted from. There’s no coded recipe for that dish.

Another chance is that they’re a variation of the classic Panzerotto with a different shape.

Can recommend they are really good, just make sure to find a recipe for blinis that look like pancakes instead of crepes (theres to kinds for some reason). I make small blinis (8cm cross) because it's easier/faster to fry those. Also sourdough instead of bakers yeast, the sourness goes well with the buckwheat.

So much of this stuff looks great.

Your pan sauce is quite a bit too thick but I'll allow it for the sake of those potatoes, nice job on those.
