Now that the dust has settled and it is universally agreed upon that chili should have beans, post your favorite chili recipe.

Beef roast, browned
Chili peppers, dried, ground
Onions, sauteed until sweated
Habaneros, sauteed with the onions, for heat
Everything into the pot with a bottle of beer, beef stock, and corn masa to thicken
Simmer for 1.5 to 2 hours
Serve with generous portions of sour cream and cheese, and a side of cornbread

Brown 3# grd beef with a can of tomatoe paste, chilli powder and minced onion. Add 2 cans chilli beans in chilli gravy.

Never tried beef roast in chili. I go 1 lbs ground beef for a meaty chili, and 1 lbs. stew beef for big chunks of beef to chew on. You forgot tomatoes. I use diced tomatoes, plus a small can or two of tomato paste to thicken. Kidney beans, obviously, and I throw in a can of corn for color, texture, and fiber. Never went for cornbread with chili, I prefer tortilla chips or saltines used as a spoon.

I just started cookin this a few minutes ago. My recipe isn't anything special except I like to throw in a can of poblano peppers in adobo sauce. I really like the extra heat and smokey flavor. I wanted this batch a little more watery so I put in some chicken stock.

I knew a chili master who was as progressive as AOC and Bernie, and he told me beans were acceptable in ground meat chili but should not be used in the shredded meat style. He said the only mandatory requirement for either was using a good mix of dried mexican peppers like arbol, guajillo, chipotle, pasilla, ancho, etc. and incorporating a few fresh peppers. After that, he said just go freewheeling and have fun. Mind you, he had the proof with competition awards. He was a hunter too, that's how I met him. 2 pounds chuck roast, cut into bite sized pieces, brown on all sides
2 onions, diced
3 jalapeno, diced
6 arbol, 4 ancho, 6 guajilo
Pound of jalapenos
4 or 5 habaneris
Garlic
Lime juice
Dark beer
Beef stock
Cumin
Salt
Toast and grind the arbol, ancho, and guajilo peppers until they're a fairly fine powder, set aside 3 of the jalapenos, deseed and blend the rest of the jalapenos along with the habaneros and 5 to 6 cloves of garlic, add the juice of 2 to 3 limes as you're blending, now add the chili powder to make the chili paste and set aside, now dice the onion and jalapeno, set aside, cut the meat into bite sized pieces, brown on all sides in a dutch oven set aside meat, add onion and jalapenos, cook the onion and jalapenos down a bit, add the meat, add the chili paste and cook for another minute, deglaze with beer(I use Guinness extra stout), add beef stock until it covers beef, put in the oven at 350( 176 Celsius) after the first hour of cooking add salt and cumin to taste, cook for another 3 hours or until the meat is extremely tender. I usually check on it every hour to see if it needs more salt, cumin, or beef stock if the sauce has reduced to much before the meats done. Serve with flour tortillas or corn bread
