He has no expertise in the field and gives advice on how to do things. Many times he insists that his method is more practical and has a general attitude of taking short cuts because people are busy. I make a nice dinner for my gf every night and I have to factor in picking her up near the end of cooking. I'm sure this guy speaks to the people that just like doing the bare minimum and want easy success. If he does one thing correctly, he makes me seethe. I hate him and all he stands for. The home chef is the last person that should be taking short cuts. Watch his Q&A's if you want to be convinced he knows nothing about cooking. I did watch the video, and the impression I was left with (that I was hoping to see some perceptive anons ragging on) was that he's unburdened himself.
Like seriously, in telling this dinky story completely unrelated to anything else on his channel, he starts with several minutes of preface going back to his adolescence. And in telling the story he weaves in basically his life's total sum of.... I don't want to say tragedy, but any sore spot or thing-that-didn't-go-his-way or moment of note, and gives full accounting of his mental/emotional state through every incident. I gave up on my master's and was solicited for an interview under strange less-than-ideal circumstances and here's why I said yes and here's what I did and why I did it and what happened to my kid that made me have to be where I was doing what I was when I said what I said and why and etc.
Like honestly I think his cooking videos are compelling enough and I like the not-a-chef-just-a-guy-in-his-kitchen-to-feed-his-family angle he presents from, so I don't shitpost about him.
