I'm going to make beef short ribs with parsnips and carrots as my veggies.

How do you utilize parsnips in your cooking?

Parsnips are delicious, and more tasty than carrots, but the texture is really easy to fuck up.
I'd roast them separately and sauce them, rather than risk them turning to mush by cooking them with the meat.

We like to boil parsnips and make a root vegetable mash. Recipe varies but we've used parsnips, carrots, rutabaga, potato, yam, sweet potato, and beets before. Parsnips are the star though and they make a really nice mash if you want something different from mashed potatoes.
