Right from the beginning. He makes sooo many procedural mistakes, and lack of taste/texture.

Respectwise, I have none for him. The profanity is a sign of a lowlife with poor schooling. People who learned to read don't feel the need to reach for profanity rather than the best vocabulary word for the job. He is likely learning disabled in some way. I was done with him when he insulted all the Indian people he came in contact with during that India tour he did. The academics, chefs, and liaison handlers? All the people literally cringed the entire time he spoke to him, from his profanity and his misconceptions. He's a low class uncultured idiot.
As far as a hack goes, he is being handed recipes that he didn't do a stitch of research when he makes the "best chili con carne american style" with glugs of worchestershire and corn kernels, and served with WTFbratwurst. Idiot.

Are you talking about the video he did with Sadhguru? To me, he just came across as a clueless Scot.

His restaurant is wonderful. I ate there when Clare Smyth was head chef and I havent found anywhere better in the last 10 years. You dont get 3 stars by being talentless and he earned 3 stars as head chef. Clearly when it comes to that style of food, he knows (knew) what he was doing.

His home cooking clips are very hit and miss though. In this clip https://www.youtube.com/watch?v=9biIOtEYeHc for example, the pork clearly isnt crispy. You can see the skin is still soft. There are a lot of examples of this kind of shit.
