Chop white onion, celery, carrots into a fine dice. Cut basil into ribbons, and mince thyme and oregano leaves. Crush and fine chop four garlic cloves. Roast chicken thighs in oven until nice and brown, save juices. Sweat veg in butter on low heat until soft, and onions translucent. Turn heat to high, add herbs and garlic, cook until aromatic, stirring to keep the garlic from burning. Add white cooking wine, about a cup, reduce by half or until you can't smell the alcohol, add water and chicken juices, pull thighs apart and toss in, chop potatoes and add to it, salt and pepper to taste. Make a slurry of equal parts corn starch and cold water, bring soup to a rolling boil and add the slurry, whisking vigorously. This is my favorite chicken soup recipe for a cold, snowy Montana day.
