Might be going to Vegas over New Years, what are some dining establishments I should check out?

Never been to the west coast, so it can be west coast specific or Vegas specific

Don’t fall for buffets. That anon probably didn’t bother trying a decent restaurant. Yellowtail in Bellagio is great as well as Top of The World in Stratosphere. Bouchon in the Venetian is good and Delmonico is outstanding. They also had a tasty South American restaurant in the Venetian. Blue Ribbon Sushi and STK in Cosmopolitan are great. The seafood was incredibly fresh at the former compared with your typical sushi restaurant that’s not on the California coast. Cabo Wabo Cantina at Planet Hollywood is more casual and has excellent American Mexican food - not at all like the typical slop o shit Mexican restaurants. Also you can enjoy great people watching there. For ultra fast casual, I though Gordon Ramsey’s fish and chips place in the Linq area was good. Don’t do something dumb like go to McDonalds, Margaritaville, Bubba Gump, or the lowest price restaurants tucked in food courts. Those will leave you thinking the food there has nothing special to offer. Look on OpenTable.com and find something unique with good reviews.

Vegas has a Chinatown district with a lot of different asian cuisine options, there's always the celebrity chef traps at the strip hotels
Lots of mexican options, you should do the tacos el gordo thing at least once on a trip to Vegas
If you want a steak dinner go to the steakhouse at circus circus.

That’s what I meant. I’ve had plenty of real Mexican food as well as west coast American Mexican food and those are usually much better than the slop o shit I’ve been experiencing on the east coast and flyover states. Some restaurants throw Kraft singles over the refried beans and don’t bother to blend or melt it in. Truly disgusting. I miss Cabo Wabo. They have great shrimp and tuna ceviche.

Sunday at Bally's one of the restaurants is converted to STERLING BRUNCH. STERLING BRUNCH is all you can eat seafood (including lobster) and unlimited real French champagne. About $120 a plate if I remember correctly, but always a good time.

Best casino buffet is probably The Wynn buffet. Lines at the casino buffets can be terrible and they're pricey. If you just want to eat a lot for less, there was (at least a few years ago was) a good Korean BBQ place on the strip with an all you can eat option. It's the only all you can eat place I've been to where they actually encouraged me to eat more meat.

Vegas actually has some good Japanese food. There is a curry place and a Udon place that were really good last time we went.

We go a lot because we have family there. The strip sucks unless it is your first time. There are some great hikes around also the Hoover dam is not far and is an interesting thing to see.

There is also a ski resort, Lee Canyon, that is not amazing but still pretty fun if you wanted to do a few runs.

I like to go see the botanical gardens in bellagio every few months. Sometimes the theme is underwhelming but it’s usually incredible and it’s free. The high roller is neat as a local since you have the chance to see local Las Vegas from the ride but you might enjoy going to stratosphere more. The restaurant turns while you eat and gives you free admission to the viewing deck when you eat there. The treasure island volcano is a fun display to watch if it’s still running. They have been reducing the show times a lot over the past several years. Generally walking through the Fremont street experience is a lot of fun. I don’t care much for that area overall, but I always take visitors there to revel in the seedier side of Vegas tourism. Opium is a really unique variety show themed in outer space and created by the same company as absinthe.
