Sounds like you received an industrial one, a cheap product.
Like everything, panettone comes in cheap forms and in the authentic artisanal or semi artisanal ones, which are way fresher and moist.

A good quality panettone can last 2-3 months or a little more closed in its bag, everything that lasts 1 year or more is processed industrial shit, it can’t be moist for obvious reasons.

It’s not dry but it’s also not a high quality panettone, in fact it’s a “base” one from Galbusera. It’s one of the best cheap panettone you can get and the semi candied apricots inside are moist.

Pictures don’t tell the full story with panettone, you need to try it.
Also part of the moisture lays inside the fruit, that’s why cheap panettone use supermarket raisins and expensive ones have fresh rehydrated fruit.

The difference is quite staggering.

Already eaten half of it, it’s so good.

Long story short: this is truly one of the best panettone I’ve ever tasted, I understand why it’s ranked so high every single time.
It’s super moist, soft and even after two slices I don’t feel full and heavy at all, it’s so soft and you can clearly tell that they made the dough rest for a very long time.

The coffee flavour is subtle like the white chocolate sweetness, the orange peel comes out at the nose but the lightly bitter espresso infused dough clears your mouth.

I don’t know anon, the fact is that in the latest years panettone has exploded becoming international, there’s a world championship just like they do for pizza, and therefore many country that you wouldn’t even suspect makes them including Japan and Egypt for example.
The main difference between Italy and the rest of the world is that other countries makes high end panettone because they’re made by specialised people who studied in Italy and therefore they only make artisanal pastry products while in Italy you have the full range from the bottom up to the top end products.
The cool thing is that panettone is made by different artisans, they could be pastry chefs or even pizza makers and bakers, that’s why you can find a widely different style of products.

With that said, every market has its recipe so it’s possible that German made panettone is made to satisfy German tastes.

To those who dislike panettone because they are eating dry or bland ones i say try one from Loison. Look for 'top line'. It is more expensive, but not extortionate considering the effort and ingredients.

My dad bought us one in a metal tin one year and it's the one of the few i actually rate. All the supermarket ones are usually dry and/or are made using poor quality ingredients.

This is why it was good:-

1. It was buttery and moist like brioche. The butter also had real depth to it, like when you ferment something and get multiple layers of savoury flavour.
2. When we opened the tin it had the most intoxicating vanilla/orangey/buttery smell. We kept the tin and used to open it just to smell (it lasted for months after the panettone was long gone)
3. When you pulled the panettone apart it didn't crumble like a cake, but came apart in long soft seams.
4. The dried fruit had a purity of flavour we'd never experienced before. In other fruit cakes/breads they don't remove the pith sometimes and you get a nasty tang after taste.
5. It was sweet but not in your face sugar rush inducing. Really well balanced.

The Tiri panettone I just ate didn’t have sultanas nor candied fruit but the dough was perfect and it had the classic orange taste and smell, also the crust was good, therefore even if there was coffee and white chocolate the final result was just different but clearly it was still a panettone with its classical aromatic profile.

This kind of customisation usually is reasonably well done by artisans because they can balance the final result but it’s kind of poor with base level panettone because they just add cream and often the result is an overly sweet result, which is not unpleasant at all but if you’re a cultured food lover you should

In Italy we have panettone gastronomico which is a salted panettone dough (without sweet ingredients and sugar of course) cut in layers each one filled with either cold cuts and sauces/cream cheese, fish like smoked salmon or small shrimps with mayonnaise, vegetables on oil and so on, each layer has an unique combination so when you cut a slice you get a panettone slice that is basically made of multiple sandwiches made of salted panettone dough.

You can made this at home using premade and precut salted panettone (you can make it yourself too of course) or bakeries make these too with fresh ingredients the day before Christmas (on order). They can be quite expensive.
