Why is it that when i look up a recipe in english, there is some sort of broth or stock among the ingredients.
Here in central europe we only use those for soups, so how come that westernes use it in almost everything?

It gives more flavour to the food, as you are basically adding different vegetables and a lilttle bit of chicken saltyness to it. You obviously don't use shit tier stock, only organic ons with no MSG, ideally just powdered soup vegetables, wihch you can add to anything for extra flavour.

You're question is quite absurd.

The stock you use have to match what you are making. You can make everything from a pure one with barely anything else than bones/scraps, or you can add herbs and vegetables too. How you mix the stock, determines the flavour of the stock that again influences the final dish.

As you can make stock out of pretty much anything, from pure vegetables, to fish, to chicken, lamb, venison, beef, whatever, and add countless combinations of herbs and vegetables, there is endless variation.
